Dhaba Style Country-Chicken

Who is not fascinated by Dhaba’s food if set off on a road trip. Dhabas are the road-side eatery joints on Indian highways mostly comprise of one-shed building where you can enjoy the fresh prepared food sitting on cots. Food is very much pocket friendly and there is always a hint of local cuisine in the taste.

I found a lot of Dhabas while travelling from Delhi to Chandigarh with some interesting names “Punjab di putar” ,”Sing da Dhaba”, “Sardarji Dhaba” ….And if you are making a plan in winter ,then i am sure you gonna to have the best gastronomic experience that i cherished till date . The smoky flavor of makki-di roti with sarso da saag is completely a bliss to your taste bud .Try to find a dhaba near mustard farming, so that you can enjoy the view while having your food on charpai(cot).

Again there are lot of dhabas i came across while going to Devprayag from Rishikesh which were pure vegetarian. I had the best “Aloo Parathas” there served with a side dish of Rajma, curd & a slightly runny chili-mint chutney.

In Odisha there are dhabas too ,mostly it’s a break journey point for all those long-distance traveler and truckies on highways.

The recipe i am sharing is what i could recall from my memory that i relished at a dhaba in Odisha. I did it in completely my way. Try it & you gonna love the taste.

  1. Marinade Chicken with turmeric ,salt,ginger paste,garlic paste,red chili paste,1 tbsp onion paste and 1 tbsp mustard oil for at 30 min.Rub the spices well using your fingers 🙂
  2. Heat 3 tbsp Oil in a cooking pan. Once oil reaches it's smoke point cool down a bit.
  3. Then heat it again , add bay leaf,cinamon,cardamom .After a minute add chopped onion and fry till they are golden brown.
  4. Add onion paste and fry for 2 minute .Add Chicken to it and saute at high flame at least for 5 minute.
  5. Make a paste of all masala powder adding 2 tbsp water.Add this paste to chicken and mix well.Adjust salt.
  6. Add 2 cup warm water to it & cook it covered until they are done.
  7. You can add more water if you want more gravy.
  8. Serve hot with rice or chapati.

Note : I have prepared with Country-chicken which can be replaced with farm chicken.
