Chenna Payesh is the Chenna kheer. The crumble Chenna act here like grain. It’s best to use fresh Chenna to make Chenna Payesh.
You need milk and sugar for the sweetness. I always prefer adding a little amount of sugar. There is a kind of sweetness when the milk is thickened. I absolutely love that.
You can add Jaggery or Coconut Sugar in place of regular sugar.
Adding dry-fruits is optional. You can use pistachio ,Cashew nuts , almonds etc. Fry cashew nuts in ghee to golden brown before adding to payesh. I have used only chopped almonds for my recipe. Those dry rose petals add such festive vibes.
I always use a good quality Ghee making Chenna Payesh .
I picked A2 Ghee from ‘Amritamglobal’ brand made from Happy Desi Gir Cow’s pure A2 milk.
A brand that has adopted the original Vedic way known as ‘Bilona Method’ to prepare pure Desi Ghee !
How to make Chenna at Home
Start boiling 1 ltr milk at low flame. Once it comes to a boil , add 1 tblsp lemon juice or Vinegar. Switch off the flame. You can notice the milk is getting curdled. Soft cottage cheese is getting separated from the milky whey. If it’s not happening, you may need to add a little more lemon juice.
Use a cheese cloth and strain the cheese. Wash once under the tap cold water .Squeeze the water softly.
Tie and hang the cloth for 15-20 minutes . At the end you will get the Chenna which can be used to make Chenna Payesh.
What can be used in place of Chenna
If you can not make Chenna at home , you can always use fresh paneer for this best Chenna Payesh Recipe.
