The bright sun on a day in winter brings a gleeful chuckle. I always search for extra warmth in my food on such days. Gajar ka Halwa with Gulkand is such a seasonal comfort. The slow winter breeze while soaking up the sun sets the perfect mood for it.
Every season has it’s own mark. Winter is the time for comfort , an extra cup of coffee ..a little more of sleep in your cozy blanket..an extra woolen sweater .A hot rasagolla or a plate of hot halwa. I know you must be in a state of euphoria.
Gajar ka Halwa with Gulkand
A similar winter bliss is our customary “Carrot Pudding” (Gajar Halwa) that every Mom cooks as soon as carrot arrives in the market.I have taken this dessert to a level up by bringing a distinct royal flavor as well as look to it. I am sure once you try this, you gonna like it more than your regular one.
Gulkand is dry rose petals cooked in sugar syrup. Easily available at the store. I have replaced the regular white sugar with Jaggery and Brown Sugar. But You can use white sugar in making Gajar ka Halwa with Gulkand.
Ingredients for Gajar ka Halwa with Gulkand
Ghee or clarified butter which is a must for me. I always prefer an organic Cow Ghee. In winter the special red carrots are available in the market. You can also choose the Ooty Carrots which is not that red. And the taste is not the same.
You can use dry fruits of your choice or you can skip too. My Mom sometimes only adds raisins.You are always free to try the variations. Rosewater is for the essence which is optional.

- 500 gm carrot Grated
- 1 litre milk Full fat
- 1/2 cup brown sugar
- 1/2 cup jaggery organic powder
- 5 tablespoons butter Clarified
- 2 tablespoon almond chopped
- 1 tablespoon raisin
- 2 tsps rose water
- pistachios Blanched for garnish

- Take a heavy-bottomed steel pan and add 4 tbsp ghee.Put on low flame and add the grated carrot as soon as ghee melts.Fry the carrot for few minutes until it soft and most of it's water evaporates.But it should be little moist.Add full fat milk at this stage.
- Cook this mixture on a slow flame till it thickens and almost half in quantity. Add brown sugar and mix well.cook for a minute and add jaggery powder.Mix well and cook until it thickens well.
- When almost done , add gulkand, raisin and 1 tbsp melted ghee and cook for another 2 min.Stir chopped almond and switch off the flame.sprinkle rose water and stir it once.
- Your Shahi halwa is ready .Garnish with pistachio and serve warm.
