The cleaning process of fish on a bonti is another common sight in a fish market. Despite the recent incursion of knives & other modern Western-style kitchen utensils, the bonti is still alive and well used in the urban kitchens of Odisha. I am familiar with this traditional iron equipment since my childhood , its still a part of my Mom’s kitchen.
An interesting blade is found on the kuruni, a bonti used for only grating coconuts.

Bengali Bhetki Macher Paturi Recipe
Bhetki boneless slices are used in preparing “paturi” dish, a delicacy from west-Bengal. You need fresh banana leave to prepare this dish.So get it before hand.
You can also prepare this dish with medium sized prawns. Clean and devein before using them.
How to Prepare Banan Leaf to use in Bengali Bhetki Macher Paturi Recipe
Use of Banana leaf in Asian Cooking is an old practice.That adds flavour and freshness to the dish . Banana leaf is also used as serving plate in Temples of Odisha.
To cook this Paturi dish , you need to form small pockets using Banana sheets. It’s an impressive way to present the dish.
Wash the Banana leaf with water and pat it dry .Trim the big leaf into approximately 10*6 inches sheets .
You need thread to tie the parcel after placing the marinated fish slice on a sheet.I have cooked on a Tawa. You can also use a steamer and steam these parcels for 7-10 minutes.

- 200 gm Bhetki fillets
- 2/2 tsp lemon juice
- 1 tsp Turmeric powder
- 2 tbsps black mustard seed black
- 1/2 cup grated coconut
- 4 green chili
- 6 Cloves garlic
- salt
- 2 tbsp mustard oil
- Banana leaves

- Cut the fish fillets into medium squares.Add salt and lemon juice ,keep in fridge for 15 minute.
- Soak mustard seed in water for 15 minute ,drain it .Add garlic,green chili, turmeric ,coconut and make a fine paste using few drops of water.
- Add the fish pieces to the paste and mix until evenly coated.
- Warm all prepared rectangular banana leave sheets (10 * 6 inch) for 30 sec over a flat tawa. It will make it soft.
- Take one sheet ,sprinkle little oil and place few pieces of fish in the center.
- Fold it from all edge and make a parcel, tide with a thread.
- Heat a tawa ,add 1 tsp oil on it.Place four prepared banana pocket on top.Cover with a lid and cook at slow flame .
- After 4-5 minutes flip those parcels .You need to cook both sides. You can notice the change in colour of banana leaf .It will be brown.
- Cook for another 2-3 minutes and serve hot.
