You just need 5 spices to make this Dalma Spice powder. You need to dry roast each spice separately before making to a powder.
What is Dry Roasting?
It is a method of slow roasting without oil. This process helps releasing the sublime flavour of the spices.
One has to dry roast each spice differently because every spice takes its own time. Dry Red chillies may take more time compared to black peppers.
A little carefulness is needed when you dry roast spices. The flame should be low and you need to constantly stir . Else there is a fair chance of burning. you just need to notice when the colour changes slightly.
Cumin seeds will look a bit darker when it’s done . you get a nice aroma once it starts releasing its oil with the slow heat.
Black pepper may need only 20-30 seconds for the dry roast.
Dry Red chilies may take upto 2 minutes. So as the Bay leaves.
Cool the mixture at room temperature before making a powder. Else it affects the shelf life when stored in an airtight container.
You can store the Dalma spice mix in a glass jar at room temperature. Keep it in a dry and cool place. To increase the shelf life , you can keep the jar in the refrigerator.
