I have used Onion , Garlic , Green Chillies ,gram flour and a few spice powders to make cutlets.
You need to finely chop the Red Onion. You can skip though.
The Garlic creates the magic . It adds so much flavour to this dish . So be generous if you love Garlic. I have added 1 tbsp crushed garlic to 150 gm fish eggs.
The gram flour acts as a binding agent.I have added 1.5 tablespoon . you can add one more teaspoon if you like.
At the end you need to shallow fry on a flat Tawa or a cast iron griddle. Grease the Tawa with a little oil. In Odisha the use of Mustard oil is the most. You can use any other vegetable oil. Do not use Olive oil or clarified butter.
Just drop spoonfuls of the liquid mixture on hot Tawa. It changes its colour once cooked properly.Cook both sides of the cutlet.
