Stuffed Bitter-gourd Recipe
There are 2-3 varieties available in the market here. It varies in size. Avoid the bigger one (5-6 inch ) for this Stuffed Bitter Gourd Recipe .
I prefer to use Organic one to use.
The stuffed Spice mix is prepared from Garlic , cumin seeds, Red chillies and Mustard seeds. You need to soak for 10 minutes before making a fine paste.
Immediate use of the paste may result to more bitterness in the dish. As Mustard has pungent flavour. So let the paste rest for 15 minutes before using to make Stuffed Bitter Gourd Recipe.

How to Serve Odia Style Stuffed Karela
Serve with Steamed rice along with other dishes. Mix Rice with Dal or Sambar ( lentil based curry ) and start the meal with this Stuffed Bitter Gourd .

- 6 bitter gourd Medium sized
- 1 tsp Cumin seeds
- 1.5 tbsp Black Mustard seeds
- 6 cloves garlic
- 4 Dry Red Chillies
- 1 tsp Turmeric powder
- salt per taste
- mustard oil

- Soak Mustard seeds, Dry Red chilies and Cumin seeds in 2 tbsp water for 5 minutes.Make a fine paste and keep aside for 15 minutes.
- Make one small slit lengthwise on bitter gourd. Remove all seeds .Add turmeric powder and salt and give it a mix .
- Add 1 tsp of Mustard oil and salt to mustard paste. Stuff the bitter gourds with this paste.
- Heat Oil in a skillet. Shallow fry at medium flame till it’s done.
