This Ivy gourd Coconut fry is my Mom’s recipe. The flavors are perfectly balanced with minimal ingredients . you can easily make a person to enjoy this dish who usually don’t prefer to eat it.

Ivy gourd Coconut Fry
Use fresh grated Coconut in preparing this Ivy Gourd Fry .It’s refreshing and uplifts they flavours to another level up.you can use frozen coconut. Make sure to bring it to room temperature before adding to this dish.
I have added tamarind pulp to this dish. You may add a pinch of jaggery to balance the tanginess. I have not added though.
Fresh curry leaves are optional. But I would recommend to use .

- 2 cups ivy gourd
- 3 Dry Red chili
- 2 tbsps coriander seed
- 1/2 cup fresh coconut Grated
- 1 tsp Tamarind pulp
- 1 Sprig Curry leaf
- 2 tbsps cooking oil
- salt per taste

- Wash Ivy Gourds and pat dry. cut all ivy gourds into two pieces length wise.
- Heat oil in a pan,add curry leaves .Add ivy gourd ,turmeric ,salt and fry for 5 to 7 minute.
- Make a paste of coriander seed,coconut and red chili. Add this paste to ivy gourd.Fry for another 5 minute until they are almost dry.
- Add tamarind paste and saute for another 2 minute at high flame.Serve hot.
