What is Kakharu Phula Bhaja
Kakharu means Pumpkin and Phula means Flower in Odia language. Delicate yellow flowers are shallow fried with a little oil.
Dipped in a batter which is balanced by salt ,cumin powder, chili powder and a pinch of sugar .
Pumpkin Flower Fritters Recipe
The batter is mostly prepared with soaked rice, the traditional way of doing it. The coarse texture of rice brings a crispiness to the dish.Soak rice for 30 min ,than make a fine paste of it.It will give a nice smooth texture.
Many prefer to use all purpose flour. I personally do not like that.
My Mom adds crushed cumin cumin seeds to the batter sometime. It adds more flavour.
The sugar is added to uplift the sweetness. Mom always makes fritters out of them which are on little sweeter side.

Adding garlic is optional.I love Garlic and it works amazing in this Pumpkin Flowers Fritters Recipe. I am sure you will love it. You can skip it if you do not like Garlic smell at all.
Cleaning the Pumpkin Flowers
Wash the Flowers gently. Pat dry with kitchen towel. They are really delicate. Remove the Green part at the bottom.you don’t need the stem.
The stems are edible . I add them to a vegetable curry called ‘Ghanta’ .Its another Odiya delicacy .

- 10 Pumpkin Flowers
- 1/2 cup rice flour
- 1 tbsp garlic paste
- 2 tsp Red Chili powder
- 1/2 tsp cumin powder
- salt
- cooking oil
- water
Ingredients

- Make a thin batter of rice flour,garlic paste,chili powder,salt, cumin powder and water.
- Wash the flowers and pat them dry with tea towel.Dip one flower at a time in the batter on both side.
- Shallow fry on a tawa or flat pan with little oil.It will take 2-3 min to cook on each side of a flower. Enjoy hot..
