Recipe is adapted from “First Food Culture of Taste” book. I received this book a 2 month ago from centre for Science and Environment .This book has every essence about healthy good food ,those food which our grand parents been eating .The food which are freshly made from local produce ,delicious in every aspect. This book talks about the critical food-nutrition-nature-culture connection.
There are many beautiful articles by Sangeeta Khana who is always an inspiration to me and a good friend of mine. The first article I read in this book was “Naturally Sweet” by her. It’s all about Shakarkand ,that is naturally sweet and treated to be the dessert of the winter till three-four decades ago..
Chitra Balasubramaniam has written a beautiful article about Moringa super leaves.She has revealed her childhood memories eating curries and sambar using moringa leaves prepared by her mother. She has also mentioned that Moringa leaves are also being used in pizza ,omletes etc. I have tried omelet few times !!

- 1 cup toor dal
- 1/4 cup Moringa leaves
- 1/2 tsp asafoetida
- 1 tsp Turmeric powder
- 1 tsp mustard seed
- 2 Dry Red chilies
- 1 tbsp Sambar powder
- 1 tbsp Tamarind pulp
- 1 tbsp cooking oil
- salt
- water

- Boil the dal in 2 cup of water ,add salt to it. Cook till they are almost done. Mash it with back side of your spatula.
- In another pan add tamarind pulp ,asafoetida ,sambar powder and salt. Boil the mixture in one cup of water till the smell of tamarind is gone.
- Add moringa leaves and cook for 2 minute. Add boiled dal to it.Cook for 5 minute.
- To prepare the tadka, heat oil in a pan. Add mustard seed ,dry chili to it. Add curry leaves .Once it start to crackle add this tadka on top of dal mixture. Mix it well .It's ready to be served .
