What is Pitha 

Pithas rules in the eastern states of India.The process is mostly steaming. Food prepared in steaming process with zero oil is considerably better in taste .
You will be amazed to find the varities of Pithas an odiya family relish on a festive day .They are like Podo Pitha, Kakara Pitha ,Monda Pitha,Chakuli Pitha etc.

The festival of Bihu in Assam is more on celebrating the art of making Pithas. Til Pitha ,Mohura Pitha ,sunga pitha ,takeli pitha where rice is being the main ingredient.

The process of making Pithas is quite easy.You need to get the right technique to make the perfect dough. your job will be much easier once you get that.
You can try using different varieties of rice-flour .The amount of water used varies accordingly. I am sharing this Monda Pitha Recipe from My Mom’s kitchen .

Manda Pitha can be made with sweet filling or savory filling .The same pitha is known as Mohura Pitha in Assam which is must on Assamese festival Bihu.

Sweet rice dumplings can be paired with a spicy potato curry or Aloo dum .You can also pair with a spicy dip of your choice.

But I enjoy as it is . Even it tastes better the very next day .Give it a try.In winter you can make the Pitha in the night and keep it for the next day breakfast at room temperature.

Pitha can be taken at anytime of a day .Starting from breakfast to your dinner. You got my point I guess .Make them on your weekend to enjoy your good time !

Instructions
  1. Boil 1.5 cup water in a heavy bottomed pan.Take 2 tbs water in a bowl,add 1 tsp rice powder to it and make a thick solution.
  2. Add this solution to boiling water.Let the water come to boiling point.
  3. Then add salt,remaining rice flour at once and stir it continuously at medium flame for 3-4 min.
  4. Switch off the flame and cover the pan with a lid.Let it sit for 10 minute.Start kneading the mixture when it’s warm to form a dough.you need to knead for 5-7 mins forming a soft dough.
  5. In a pan cook coconut, jaggery at low flame for 4 to 5 mins. Add cardamom powder and give it a mix. The filling is ready.
  6. Now start shaping Manda pitha balls. Take the dough and make small balls like chapati ball.Take a ball and press with your finger tip at center and make a hole into it to pour the filling. Stuff the balls with prepared coconut mixture .Close it properly with wet fingers and give shape as you like.
  7. How to make the rice dumplings . You do not need any frame. Use your hands.

  8. Normally a round ball shape is given.But you can give a different shape (see the above picture)..
