I absolutely love this , can’t remember any Mango season when I missed the preparation in my kitchen .

Things to take care when you prepare this at Home.
Use Raw Mangoes. If you are using baby mangoes , then you may not find an enclosed seed. But if you are using matured one ,remove seeds. Those who are ready to start the transaction to ripe.
I make it more garlicky.You can adjust the quantity as per your taste. I add like 6-7 Garlic cloves per Mango ( 200 gm ). You can use 5 cloves if you are not a garlic fan.
Mint is optional here. Along with the refreshing flavour, it adds hue of spring green to impress ! Try to use fresh mint leaves.
I really like to make this Chutney super spicy. I end up adding 3-4 chillies per mango. But it depends on the quality of chillies. Some are not enough to bring the flavour. They only look good !
Don’t use dry chilli as it completely change the flavour. I personally don’t prefer that at all. Somehow I feel , the dish lost that refreshing factor !
How to Serve Raw Mango Chutney
This can be served as an accompaniment to your meal. You can serve with Curd Rice or Pakhala ( Fermented Cooked Rice ).
Pakhala is a traditional summer food from Odisha. Rice is fermented overnight with water and served with or without curd . Some like to temper with curry leaves and other spices like green chilies, garlic etc.
This Raw Mango Chutney Recipe can be your favourite dip . I absolutely love with Nachos. You can also serve with Onion Pakodas ( fritters).

- 1 Raw Mango chopped
- 7 Garlic cloves
- 3 Green Chillies
- 1/2 cup mint leaves
- 1 tsp sugar

- Cut Mangoes into small cubes. Take everything in a mixer.Make a paste .
- You can add more sugar if the Mango is very sour.
