Raw mangoes contain an acid which helps ease digestion . It also help in the fight against diabetes by reducing sugar levels in the body.Eating an unripe mango daily during the summer season prevents one from infections, cholera, dysentery etc.
While India produce largest amount of Mangoes in world , people here preserve the unripe one in Pickling ,drying, and fermenting process. The number of Indian Pickles are just untold and varies from place to place.
“Ambula” is a dried version of raw mangoes. Mangoes are soaked in salty water and then dried in sun for few days. Ambula is used in many Odiya traditional preparation .”Pakhala” or water-rice is such a preparation where addition of Ambula enhance the taste.
Summer days always bring back childhood memories. Summer holidays were well spent with my granny watching her making varieties of pickles .Big ceramic jars tied with clothes and soaking up the sun on roof-top..oh those Summer days !!
Most of the time I spend my summer days with books..music and summer-cooler like Green Mango Mojito.I have made a twist to Green Mango Mojito adding a dash of Rum ..yeah ! A Summer Cock-tail at the end.
