I was wondering why it’s called a bun which is not baked .But as soon as took the first bite I understood the reason behind the name. Fried Mangalore Bun Recipe

You need overripe Bananas. All those not good looking with dark skin. Those works the best.You can adjust the sweetness according to Bananas. Banana has natural sweetness.

I have used all purpose flour ( Maida) . You can try with whole wheat flour too. You can also try in 50:50 ratio.

Tips for Fried Mangalorean Bun Recipe

Adding Baking Soda is not necessary every time. In Summer , the dough ferments easily with the addition of curd.

In winter when the temperature is below 30 degree centigrade, you need to add Baking Soda to it. That helps in the fermentation process.
After you ferment the Dough over night , you can see the size of Dough has increased .A well fermented Dough is the key for making best fried Mangalorean Banana Puris.It adds the right texture.

Fry the Buns at medium to High flame. Do not increase the flame to high. You need to flip and fry both side. You will surely love the spongy texture of these Banana Puris.

You can call these Buns as Indian Banana Bread. The cumin seeds add a beautiful flavour. This is the traditional way of preparing.You can replace with Fennel seeds.

In Mangalore, this is a popular Breakfast option. They serve with Coconut Chutney and Sambar. But I like to eat without any chutneys , a cup of tea works for me.

Instructions
  1. In a bowl add banana ,sugar ,salt and mix well.
  2. Add curd, one tsp Ghee & sugar to it ,mix well.
  3. Add baking soda,salt,fennel seed to this mixture.
  4. Add all purpose flour little by little to prepared banana mixture until you get a sticky dough.
  5. Rub a tsp ghee on the outer part of the dough & Cover it. keep it aside for 6 hour fermentation.
  6. Make 8 equal sized balls of the dough. Using a rolling pin, flatten them into circular disc of roughly 1-inch diameter each.It should not be thin like chapati.
  7. Heat oil ,fry these pooris at medium flame till they are light brown on both side.
  8. Serve hot or cold .It’s a popular Mangalorean Breakfast .
