There used to be a Bengali Shop in my home-town.He used to prepare the most crispiest Nimkis.But his Nimkis were not kept in glass-jar.He stored them in a big tall tin box.
I am not much fond of maida stuff.But when it comes to this crispy snack, I just ignore that “healthy” term.The way I do to the most loved Panipuri or Puchka.

You can use whole wheat flour and all-purpose flour in 50:50 ratio.You may not get that crunchiness like the one prepared with 100% all-purpose flour.Sometimes you just need to enjoy some food the way it is.I believe if you eat everything at a limit, then it’s completely FINE!
But believe me, these are so addictive that one can devour 2 to 3 pieces in one go.So prepare a good amount.You can store them up to 15 days in an air-tight container at room temperature.
