Moringa Leaves Stir-Fry Recipe | Saga-Muga , an Odia Delicacy

This Moringa Leaves Sitr-Fry  is one of my favourite Odia dish. With minimal spices , this dish tastes amazingly delicious.

Family recipes passed down from generation to generation are real treasures for me.And I still enjoy that old method of writing recipes ,tips shared by  Mom on my notebook.
The joy was same when my Mom gave her old note book 2 year back. Many unsung recipes are there ,Moringa with Mung is one of them.

Though I learnt from her ,still I have that feeling that she makes it best.

Moringa leaves Stir-Fry Recipe  

Today the dish is about Moringa Leaves ,local produce which is found through out the year. This Stir-Fry is best to pair with steamed rice as a side dish.

We cook the Moringa flowers too . This dish is very healthy and diabetic friendly with goodness of this superfood.

Its best to use fresh coconut in this Recipe . You can use frozen grated coconut which is available in the super market.Bring it go room temperature before using in the recipe.

I know grating coconut is a task !
Do not used Coconut paste here. If you want to skip the Coconut, you can .

Adding Garlic is a must. I love Garlic flavour a lot. Adding to any Saag (Edible Green Leaves ) preparation is a must at my place .
You can use Mustard oil or any vegetable oil to prepare this Moringa Leaves Stir-Fry . Do not use Olive or Ghee .
The use of Sugar is a must. That’s my Mom’s cooking trick. Moringa leaves are slightly bitter in most of the case. So to balance that we are adding the sugar .
Tender leaves are a prize possession.But it’s not always possible. So try to mix both tender ( light green ) and the dark green leaves which are more matured !

Saga-Muga dish is also best to pair with Pakhala . Pakhala is a fermented cooked rice which is a traditional Summer Food in Odisha.

Moringa Leaves Stir-Fry Recipe
Instructions
  1. Soak mung beans for at least 2 hour.Cook in 1/2 cup of water till they are soft and almost done.Add Moringa leaves to it.sprinkle sugar on top and cook for 5 minute.The water must have evaporated.
  2. In another pan heat oil.Add sliced onion and saute till they are light brown.
  3. Add crushed red chili and crushed garlic to it.Saute for a minute.Add Moringa & mung to it.Add salt and cook for 2 minute at medium flame.You can cover it with a lid.
  4. Add fresh coconut and mix . If it looks dry , sprinkle a little water at this point. cook for another 2 minute at slow flame.It's ready to be served.
